Moong Salad

This recipe is very rich in Vitamin E from the germinating seeds and is very good for your skin.


  1. Moong dal – 1 cup
  2. Chopped cucumber – 2 Tbsp
  3. Chopped onions – 2 Tbsp
  4. Chopped green chillies – 1 tsp
  5. Chopped dhone pata (corriander leaves/cilantro) – 2 Tbsp
  6. Diced cooked potato – 3/4 cup
  7. Black pepper 1/2 tsp
  8. salt to taste
  9. sprinkling of lime juice (optional)


  1. Soak the moong dal in water overnight, drain and place in a large bowl.
  2. Mix in the rest of the ingredients and toss the salad. You can add as much or as little of the other ingredients.
  3. The potato can be either boiled or fried (or both!) but must be cut into small pieces.
  4. Makes for a simple yet nutritious breakfast.
